Bran Bombs

These little beauties stay lovely and moist for a few days so you do not have to scoff them all right away (apparently).  Note the lack of butter that has been replaced with a healthy and cholesterol free alternative.  Its the oil that keeps the moistness in for days.  While there is some sugar a lot of the sweetness comes from the fruit filling as well.

These little darling are guaranteed to clean out your pipes and considered yourself warned - 7 in a 24 hour period will cause a definite reaction.


Bran Bombs
Makes 24
4 eggs
1 cup brown sugar
1 cup of oil (bran oil if possible)
2 tsps vanilla extract
1/2 tsp salt
Beat these 5 ingredients together in a large bowl with an electric beater for 2-3 minutes, then stir in the following but don't over mix.
2 cups of wholemeal flour
1 cup of wheat bran (not bran buds)
1 cup of wheatgerm
1 tsp of baking powder, sifted
1 1/2 tsp of baking soda, sifted
1/2 cups of raisins
3 cups of either or a mixture of
Grated carrot
Mashed banana
Grated apple
Chopped walnuts
Spoon into lined muffin pans and bake for 15-20 mins at 180 C

These keep moist for days in an air tight container and freeze well too.  No need to ice but cream cheese icing makes them a bit more special.
