Bill Grangers' Banana Butterscotch Pudding



This dessert is a variation on the way you cook a self-saucing chocolate pudding.  I think it is absolutely genius in simplicity and in design.  I saw it featured on the UK television show, Perfect, and nearly broke my fingers stabbing at the keyboard to get the recipe.

Ingredients
125 grams plain flour
1 pinch salt
120g caster sugar
3 tsp baking powder
1 mashed banana
200ml milk
1 lightly beaten egg
1 tsp vanilla extract
85g butter

For the topping
140g brown sugar
4 tablespoon golden syrup
250ml boiling water

Method

Preheat the oven to 180 degC.  Sift the flour, salt, sugar and baking powder into a bowl.

Add the banana, milk, butter egg and vanilla extract and whisk together until well combined.  Pour into a greaser 2.5l ovenproof dish.

To make the topping, place the brown sugar, golden syrup and water in a small pot and bring to a boil.

Pour the boiling mixture carefully over the pudding and bake the pudding for 30-40 minutes until its firm to the touch.

Serve hot with vanilla ice cream.
