Thai Beef Salad
Ingredients
1 tablespoon oil
250 grams scotch fillet
1 onion, thinly sliced
8 cherry tomatoes halved
mixed salad greens, i like rocket
300 grams crunchy noodles
For the dressing:
1/4 cup lemon juice
2 cloves garlic
2 tablespoons chopped fresh coriander leaves
2 tablespoons chopped fresh mint
1 tablespoon fish sauce
1 tablespoon soy sauce
1 tablespoon brown sugar
2 tablespoon fresh chili minced
Method
Heat oil in frypan. Add the steak and cook 1 to 2 minutes on both sides. Remove and slice thinly. Place in a bowl. Reserve.
To prepare the dressing, whisk the ingredients together well. Toss through the meat with the onions and tomatoes.
Arrange the salad greens on serving plates. Scatter over the beef mixture.
